Frank? Meet Dave. My family is from Dartmouth and I spent all my summers in NS, was born there, but live in TO. I have a case of medium and a case of hot brought to me by my Mum every fall when she comes back to Toronto from summering on Grand Lake, NS. Which to choose for what? Well, HOT is amazing as a hot sauce, dip, marinade or glaze. MEDIUM is my favourite for BBQ, as I find it’s thicker texture holds nicely. My favourite thing to do with the hot is to gently mix in a little kewpie mayo so it ribbons through the sauce.
I do this in a small ramekin and it has that great white/red contrast and it the best dip for pizza crusts. I got to go get some right now! Hello Dave, see ya’ Frank!
